High Protein White Bean Salad
High Protein White Bean Salad
Serves:6
INGREDIENTS:
4 cans 15 oz of northern beans, drained and rinsed well
1/2 red onion finely diced
2 cups assorted sweet peppers finely diced
1/2 cup fresh cilantro
1/2 cup fresh parsley
Vinaigrette:
2 freshly squeezed lemons
1 freshly squeezed lime
3/4th cup olive oil
1/4th cup honey
DIRECTIONS:
1. Mix all ingredients into a large bowl
2. Add vinaigrette ingredients to a small bowl and whisk together
3. Drizzle bean salad with vinaigrette and let chill 1 hour before serving.
4. Serve as a side salad, as the main meal or mix with quinoa for additional protein
