Bacon Mushroom & Swiss Meatloaf



















Bacon Mushroom & Swiss Meatloaf

Makes-2 loafs

INGREDIENTS:
12 ounces chopped raw bacon
1 small sweet onion, chopped finely
5 button mushrooms, chopped finely
3 pounds grass fed ground beef
½ cup coconut milk
6 slices Swiss cheese, divided between loafs
1/2 cup gluten free breadcrumbs
1 Tbsp ketchup
1 Tbsp garlic powder
1 Tbsp onion powder
1 tsp pepper
1/4th cup fresh parsley

DIRECTIONS:
  1. Preheat oven to 350 degrees .
  2. Place bacon in a skillet and cook over medium heat until the pieces are browned. Remove with a slotted spoon to paper towels. Discard all but 1 tablespoon of bacon grease. Stir in onions and mushrooms, and cook until soft. Remove from heat.
  3. In a large bowl, stir together beef ,milk, ketchup and breadcrumbs. Stir in the onion and mushrooms. Add all but 1/4th cup of bacon to reserve for topping. Stir in seasonings and mix until well blended. Shape into two loafs, and place in meatloaf pan.
  4. Bake in a preheated oven for 1 hour. Drain fat, and place swiss cheese on top of meat loafs with remaining bacon. Return to oven, and bake until cheese is melted, about 5 minutes.
