Chorizo Pizza with a Mayo Jalapeno Dressing


Serves-6

INGREDIENTS:

1 pd chorizo, cooked ( I use turkey chorizo)
1 tomato chopped finely
1 can BPA free black beans, drained and rinced well
1 onion red or white sliced into long thing strips
Jalapeños in oil
3 cups pepper jack or cheddar cheese
Sun Dried tomato GF wraps

MAYO JALAPENO DRESSING:

1 cup mayo
1 whole onion
½ cup jalapeños in oil
1.5 tsp cumin

Directions: Pre heat oven to 350


  1. Cook chorizo fully and set aside to cool.
  2. In a food processor blend all mayo jalapeño dressing ingredients until creamy and smooth.
  3. Then place chorizo in food processor to finely dice as well. ( I prefer my meat not so large, this part is optional though)
  4. Get your prep station set up. One by one assemble the pizza. Get a baking pan and place aluminum foil down and spray with cooking spray of choice.
  5. First, place a spoonful of mayo dressing onto center of wrap and spread over the full wrap. Add as much mayo as you would like.
  6. Next, add your meat, beans, onions and tomatoes. (adding more jalapeños is optional, I did and it was divine) Lastly sprinkle cheese over individual pizzas.
  7. Bake for about 10 min or until cheese is melted.
  8. Slice into 4 quarters so the pizza is easily edible and enjoy!
