 Curry Maple Sweet Potato Soup 


Serves-4

INGREDIENTS:

2 sweet potatoes, ends cut off, skin left on and cut into half
½ yellow onion, finely chopped
1 (14oz) can coconut milk with juice
1 cup vegetable stock* vegetarian use 1 cup water
2 garlic cloves, minced
½ Tbsp curry
2 Tbsp maple syrup
basil for topping

DIRECTIONS:

  1. Place all ingredients in crockpot and mix thoroughly
  2. Cook on high for 3 hours.
  3. Use a hand blender, or food processor to puree mixture until smooth. I used a regular blender which had a setting to puree, worked marvelous!
  4. Garnish with a sprinkle of basil. Eat up because its delicious!
