Peanut Butter Cups
























 

Peanut Butter Cups

Makes-20-25 individual cups

INGREDIENTS:

1.5 cups non hydrogenated peanut butter
1/4 cup honey
1/4 cup ghee butter, melted * can use vegan butter
1 Tbsp vanilla salt, or regular salt if you don't have vanilla salt
Mini baking cups
2 disposable cake decorating bags

CHOCOLATE SAUCE:

~16 oz dark chocolate chips( use less of more depending on how thick you want the chocolate)
1/4th cup coconut oil

DIRECTIONS:

1. Line a baking sheet with baking cups.
2. Using a boiler add half the chocolate, 8-10 oz and 2 Tbsp coconut oil. Melt together.
3. Place a disposable bag in a large mug and fold ends over the top of mug, opening bag slightly.
4. Place melted chocolate into bag and place a rubber band on the end so it doesn't spill when you squeeze bag.
5. Cut a small hole in end of bag and moving quickly place enough chocolate to cover the bottom of the baking cup.  Place cups in freezer for about 10 min .
6. Next, add all other ingredients into the boiler pan to melt. Stir often, about 2 min.
7. Take cups out of freezer and repeat step 3-5 with the peanut butter mixture.
8. Place in freezer again for another 10 min and repeat steps with left over chocolate sauce.
9. Keep in freezer until ready to serve. Store in air tight container. Keep in paper baking cups until serving as well.

* Play around with the amount of chocolate you use. Peanut butter I have found stays pretty consistent and is a good amount for the filling. You can use mini baking cups as well to make more for a party or get together.
