Gluten Free Cheeseburger Mac Skillet
Serves- 4-6
INGREDIENTS:
1 lb grass fed ground beef
16 oz brown rice elbow macaroni
4 cups beef stock
¾ cup coconut milk
3 Tbsp organic ketchup
1 tsp mustard
2 tsp no salt all purpose seasonings
1 tsp onion powder
1 tsp pepper
1 cup grass fed cheddar cheese
4 green scallions, diced
½ cup diced tomatoes
DIRECTIONS:
- In a large skillet, cook beef until fully brown. About 5-8 min.
- Add beef stock, coconut milk, ketchup and mustard. Mix well.
- Add noodles and all seasonings. Do not add cheese, tomatoes or scallions at this time.
- Cover and cook on medium to low heat for about 15 min or until noodles are not tender anymore. Stirring frequently so noodles don't stick to pan.
- Add one cup of cheese at this time with the ½ cup tomatoes and mix well. Cook another 2-3 min
- Garnish lastly with green scallions.
