Gluten Free- Cream Cheese- Chocolate Chip Cookies


























Gluten Free- Cream Cheese- Chocolate Chip Cookies 


Makes 15-20


INGREDIENTS:

1/2 cup (1 stick) unsalted butter, softened( I used kerrygold ghee)
1/2 cup cream cheese, softened (organic valley)
3/4 cup organic brown sugar, packed
1/4 cup coconut sugar
1 large egg
2 1/4 cups Gluten Free Four( I used brown rice, Pamela's)
1 teaspoon baking soda
2 cups semi-sweet chocolate chips or and bittersweet chocolate chips


DIRECTIONS:

1. In a medium sized bowl add first 5 ingredients and blend for 5 min or until batter gets creamy
2. Add flour and baking soda and blend.
3. Fold in chocolate chips
4. Place cookie dough into fridge for id least 5 hours . Can set over night as well.
5. Pre heat oven to 350 and place a small dollop of batter onto a sprayed baking sheet about 2 inch from each other.
6. Cook for 10-12 min depending on how you like your cookies. I tried for 8 min- too soft, 10 min- better but 11 min perfect! Inside is chewy but cooked !
