Smoked Gouda & Sausage Mac & Cheese























Smoked Gouda & Sausage Mac & Cheese

One of my favorites! 

Serves 6

INGREDIENTS: 

2 cups heavy whipping cream
2.5 cups of shredded smoked gouda cheese( you will have to cube or shred yourself)
1 tsp onion powder
1 tsp garlic powder
1 tsp mustard powder
1 tsp paprika
1 -16 oz bag spiral brown rice noodles
1 cup diced tomatoes
1 cup peas
½ cup shallots or sweet onion, finely chopped
1 package of 4-6 chicken sausage links(mine were spicy Cajun)
2 green onions, finely chopped( garnish for topping) 


DIRECTIONS:

  1. Pre heat oven to 350 degrees.
  2. In a medium sauce pan bring 2 cups of heavy whipping cream and spices to a slight boil. Turn burner off and add smoked gouda. Continually stir so the cheese doesn't melt
  3. Cook noodles as directed and set aside when done.( I slightly undercooked mine so the cheese soaked into the noodles)
  4. Place all vegetables and meat except the peas in a medium sized sauté pan. Cook for approximately 5 min on medium heat until onions are translucent in color.
  5. In a 9x13 glass pan, coat pan with a baking spray.
  6. Place cooked pasta in pan first, then the veggies and meat. Place the peas in at this time as well.
  7. Cheese sauce should be thickened enough by now to pour over the dish. Cover pan with aluminum foil and cook for 35-45 min or until cheese is slightly brown on the edges.
  8. Garnish with green onion.
  9. Serve immediately.
