Gluten Free Cheeseburger Mac Skillet


Serves- 4-6

INGREDIENTS:

1 lb grass fed ground beef
16 oz brown rice elbow macaroni
4 cups beef stock
¾ cup coconut milk
3 Tbsp organic ketchup
1 tsp mustard
2 tsp no salt all purpose seasonings
1 tsp onion powder
1 tsp pepper
1 cup grass fed cheddar cheese
4 green scallions, diced
½ cup diced tomatoes 

DIRECTIONS:

  1. In a large skillet, cook beef until fully brown. About 5-8 min.
  2. Add beef stock, coconut milk, ketchup and mustard. Mix well.
  3. Add noodles and all seasonings. Do not add cheese, tomatoes or scallions at this time.
  4. Cover and cook on medium to low heat for about 15 min or until noodles are not tender anymore. Stirring frequently so noodles don't stick to pan.
  5. Add one cup of cheese at this time with the ½ cup tomatoes and mix well. Cook another 2-3 min
  6. Garnish lastly with green scallions.
