Gluten Free Chicken Nuggets with Rosemary French Fries



















Gluten Free Chicken Nuggets with Rosemary French Fries

Serves- 6-8

INGREDIENTS: 

1.5 cups gluten free breadcrumbs
1 cup parmesan cheese
4 Tsp basil
4 tsp paprika( I used smoked)
2 tsp thyme
2 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 cup organic butter or ghee butter( grass fed)
6-8 organic chicken breast , cubed

For the Fries:
6 organic potatoes
1/4th cup olive oil
1 Tbsp rosemary
1 tsp garlic powder
1 tsp pepper
1 tsp salt
1 tsp onion powder

DIRECTIONS FOR THE NUGGETS:

1. Pre heat oven to 400 degrees
2. Place all chicken in a large bowl.
3. In a smaller bowl add all dry ingredients and the spices. Mix well.
4. Place butter into microwave to melt fully.
5. Pour butter over chicken and mix.
6. Then sprinkle breading over the chicken and mix well to coat fully. WASH HANDS AT THIS POINT.
7. Place all breaded chicken on a baking sheet sprayed with cooking spray. Make sure they are not on top of each other but more singly placed for even cooking. 
8. Bake for 35 min or until fully cooked.


DIRECTIONS FOR THE FRIES:

1. Pre heat oven to 400 degrees. Using a baking pan place aluminum down and spray with cooking spray. 
2. Wash all potatoes with soap and water.
3. Place potato on a cutting board and cut into wedges until desired "fries" look is achieved. Or you can use a mandoline slicer .
5. Place all fries into a large bowl.
6. Pour olive oil and spices over the fries and mix well until fully coated.
7. Layer singly onto baking sheet and bake for 40-50 min or until softened.
8. Lastly sprinkle more rosemary on top for a punch of flavor!
