Cajun Jambalaya with Sausage and peppers



















Cajun Jambalaya with Sausage and peppers

Serves 4-6

INGREDIENTS:

1 cup organic brown rice
2 cups water or chicken stock
3 Tbsp oil of choice
1 package- 9 oz Amylu chicken chipotle pepper sausages or chicken andouille sausages, cut into bite sized slices
1 sweet onion, diced
1 red pepper, diced
1 green pepper, diced
1- 14.5 oz can organic diced tomatoes
1 tsp curry powder
1 tsp cajun seasoning
1 tsp garlic powder
1 tsp onion powder
½ tsp pepper


DIRECTIONS:

  1. In a large saute pan on medium heat drizzle your oil of choice. Add onion and peppers to pan. Saute for 3-5 min.
  2. Add all seasonings, can of diced tomatoes, water or chicken stock and rice to pan. Cover and cook for about 25 min. At this time add the sausages and cook for another 10 min or until rice is fully cooked.
  3. Serve immediately.
