2 Worlds Become One Spaghetti
Serves-6-8
INGREDIENTS:
1- 12oz bag brown rice linguini noodles1 lb ground turkey sausage* use vegan sausage
2 small boneless skinless chicken breast, cut into small pieces* omit for vegan
2-15 oz jars "roasted garlic, low sodium" spaghetti sauce
1 cup mushrooms, sliced
1-14.5 oz can diced organic tomatoes
1/2 each red, yellow and orange pepper, finely chopped
1/2 sweet onion, finely chopped
1/4 cup brown sugar, agave or other sweetener of choice
1 Tbsp garlic powder
1 tsp basil
1 tsp oregano
1 tsp sage
1 tsp pepper
1 garlic clove, finely chopped
1/2 tsp red pepper flakes
Italian seasoning for garnish at end
DIRECTIONS:
1. Cook noodles according to directions on package.2. Cook ground turkey sausage and chicken in a saute pan until cooked thoroughly. Chicken should be browned.
3. When meat is done transfer to a large stock pan.
4. Using the same saute pan as meat, saute peppers, onions and mushrooms for 5-7 min or until soft.
5. Add 2 jars of sauce, all seasonings and sweetener of choice to meat stock pan. Add cooked vegetables, cover and simmer for 30 min.
6.Place linguini noodles onto a plate. Scoop 1 cup sauce on top and garnish with Italian seasoning.
