Sausage, Kale and Lentil Soup























 

 

Sausage, Kale and Lentil Soup


Serves 8

INGREDIENTS:

1 pd sausage links, cooked and cut into bite sized pieces* OR vegan sausage
2 Tbsp olive oil
1 medium onion, sautéed
1 garlic clove, chopped finely
1 lg carrot sliced into bite sized pieces
1 cup brown lentils
15 oz chicken broth* vegan, use vegetable broth
4 cups water
15 oz stewed tomatoes
1 tsp thyme
1 tsp rosemary
1 tsp turmeric
1 tsp onion powder
1 tsp curry
1 tsp garlic powder
1 cup red potatoes
2 cups kale

DIRECTIONS:


  1. Cook sausage in a medium sauté pan and set aside. Sauté the next three ingredients in a large stock pan on medium heat~ 5 min . Add lentils, broth, water, and spices. Bring to a boil.
  2. Add potatoes and cook for another 20 min. Cover and simmer soup at this time
  3. Stir in sausage and kale and cook for another 3-5 min.
  4. Serve immediately.
