Paleo Roasted Vegetable Beef Skillet














 





Paleo Roasted Vegetable Beef Skillet 

Serves 4-6

INGREDIENTS:

2 lb grass fed ground beef
4 carrots, cut into bite sized pieces
4 parsnips, cut into bite sized pieces
1 head or about 6 radishes, sliced into bite sized pieces
¼ th cup oil
1 tsp garlic powder
1 tsp pepper

HOMEMADE TACO SEASONING:
1 Tbsp chili powder
½ tsp garlic powder
½ tsp onion powder
1 tsp smoked or sweet paprika
½ tsp ground cumin
½ tsp pepper
1 tsp arrowroot

DIRECTIONS:

  1. Pre heat the oven to 400 degrees.
  2. Grab a baking pan and put aluminum foil down with cooking spray.
  3. Place all sliced veggies onto baking pan.
  4. Drizzle with oil and seasonings. Cook for about 40 min. At the 20 min mark, take out and flip vegetables so they cook evenly. May burn slightly, this is normal and adds flavor :)
  5. Place all your taco seasonings into a small bowl and mix together.
  6. On medium heat place meat into a skillet and cook thoroughly.
  7. Add vegetables when done and seasoning with ½ cup water. Mix until meat and veggies are coated nicely.
  8. Serve immediately.
