Heirloom Tomato & Basil Linguine




















Heirloom Tomato & Basil Linguine

Serves: 6

INGREDIENTS:
 1 pkg linguine noodles- 14 0z
3-4 cups heirloom tomatoes, sliced in half
1 medium onion, chopped finely
1/2 cup fresh basil, chopped ( leave a few larger pieces out for serving)
2 whole garlic cloves, shell taken off
1 tsp pepper
1 tsp salt
1 tsp garlic powder
1 cup olive oil

DIRECTIONS:

1. Cook pasta according to directions.
2. Pre-heat oven to 425 degrees. Prepare a baking pan with aluminum foil and cooking spray.
3.  Add all tomatoes, onions and whole garlic cloves to pan. Drizzle with olive oil. Add pepper, salt and garlic powder over tomatoes.
4. Bake for 25-35 minutes or until tomatoes are fully roasted and cooked to your liking.
5. Place 1 cup oil into a medium sized bowl. Place cooked tomatoes and onions into the olive oil and let set for 15 min.
6. Pour all tomatoes and olive oil onto cooked pasta and mix. May add more olive oil or parmesan for serving.
7. Place a few whole basil leaves ontop of each plate before serving.
8. Serve immediately.





* Note: This is a very simple recipe packed with lots of flavor. I actually preferred mine when it came out of the toaster oven because the oil caramelized onto the noodles. You may try adding some noodles and the tomatoes to a pan and saute it a bit before serving as another trick to ensure juices coat noodles well. :)
