Pan Fried Lemon, Honey and Pepper Hake Fillets

Pan Fried Lemon, Honey and Pepper Hake Fillets

Serves 4

INGREDIENTS:
½ cup ghee butter
1/4th cup coconut oil
2 Tbsp honey
2 Tbsp freshly squeezed lemon juice
4 hake fillets or cod

HERBS:
1 Tbsp lemon thyme or regular thyme (fresh herbs)
1 Tbsp basil (fresh herbs)
Garlic pepper seasoning blend,( I got mine from costco)

DIRECTIONS:

  1. In a microwave safe dish add the first 4 ingredients and microwave for about 30 sec.
  2. On medium heat using a medium sized skillet place liquid into pan.
  3. Chop all fresh herbs finely.
  4. Once the oils in the pan start to bubble sprinkle a bit of garlic pepper into the pan evenly.
  5. Add fresh herbs to pan at this time as well. Swirl pan to infuse flavors together.
  6. Place all 4 hake fillets into hot oil. Cook for about 5 min per side.( you want to caramelize the butter, honey and coconut oil onto the fish, so don't turn it too early)
  7. After about 5 min or when fish is opaque in color, flip each hake very carefully not to splash any oil onto your skin.
  8. Cook for another 5 min and sprinkle some more garlic pepper seasoning ontop of each hake fillet to your liking. You can always add more on later if its not enough.
  9. When fillets are done place on a serving plate with a side vegetables. I used roasted green beans!
  10. Serve with a wedge of lemon if preferred.
